Miso Salmon Poke Bowl

Serves 4

Ingredients

  • 4 salmon fillets

  • 2 tbsp miso paste

  • 2 tbsp soy sauce

  • 2 tbsp brown sugar

  • 2 tbsp rice vinegar

  • 2 tbsp sesame oil

  • 2 tbsp mirin

  • Splash of water

  • Jasmine or sticky rice (75g per person)

  • Topping options:

    • Cucumber

    • Edamame (I buy frozen, my kids LOVE edamame)

    • Mango

    • Avocado

    • Sweetcorn

    • Carrot ribbons

    • Red onion

    • Crispy fried onions

    • Or simply some broccoli or peas.

Method

  1. Mix all the ingredients for the sauce together and pour over the salmon in a baking dish.

  2. Bake at 200°C (180°C fan) for 12 to 15 minutes, or air fry at 180°C for 8 to 10 minutes, until opaque and flaking easily. Just be careful if you're air frying, the sugar in the sauce can catch quickly under more direct heat.

  3. Cook some jasmine rice or sticky rice according to the packet instructions. I have a rice cooker and it's a real game changer, but I used to use the microwavable Veetee sticky rice packets.

  4. Pop the salmon over the rice, then pour over the leftover sauce from the dish. Serve with whatever you like on top! I use whatever I've got.

Top with crispy fried onions, spring onions, sesame seeds, or nothing :)
