Gambas Pil Pil

Serves 2

Ingredients

  • 170g raw king prawns

  • A good glug of olive oil (I tend to use a lot and just do it by eye)

  • 2 garlic cloves (I love garlic so I tend to use more but this may be a more normal amount), peeled and thinly sliced

  • 1 tsp chilli flakes

  • ½ tsp smoked paprika

  • 2 tbsp roughly chopped flat leaf parsley

  • Juice of ½ a lemon

  • Crusty bread, to serve

  • Salt and black pepper

Method

  1. Heat the oil in a wide base frying pan.

  2. Once the oil is hot, add the sliced garlic and cook for a couple of minutes, being careful not to burn it.

  3. Once the garlic has softened, add the prawns, along with the chilli flakes, smoked paprika, salt and pepper.

  4. Turn the prawns and cook for 5 minutes, until the prawns are cooked through.

  5. Transfer onto a plate, or a traditional earthenware dish (cazuela if you have one), squeeze over the lemon juice and sprinkle over the parsley.

  6. Enjoy with crusty bread!
