Back to recipes, today we have a very old school chocolate biscuit cake, taken from one of my mum’s oldest cook books. It is actually to die for. My Mum made it for Olive’s 3rd birthday and I didn’t get a look in, it was the quickest I have seen a cake go at a birthday party. Easy no bake recipe, and one the kids can enjoy getting involved in.
Chocolate Biscuit Cake

Serves 8-10
Ingredients
125g margarine
50g caster sugar
2 tbsp golden syrup
2 tbsp milk
2 tbsp drinking chocolate
1 tbsp cocoa
250g digestive biscuits, crushed
50g cake crumbs
50g glacé cherries, chopped
50g raisins
For the chocolate icing
125g plain chocolate
15g butter
Method
Place the margarine, sugar, syrup and milk in a pan and heat gently. Add the drinking chocolate, cocoa and half the biscuits and mix well.
Add the remaining ingredients and stir until thoroughly mixed, then press into a 20cm sandwich tin.
Chill in the refrigerator until set, then remove from the tin.
Melt the chocolate and butter in a small bowl over a pan of hot water and mix well.
Spread over the biscuit mixture and allow to set, then cut into wedges.
